Bâtonnage is the French winemaking term for the process of stirring the settled lees (dead yeast cells and other solids) back into a barrel of wine to increase their contact with the liquid, which adds texture, complexity, and aroma to the finished wine. This technique, also known as lees stirring, is common with white wines, particularly Chardonnay, and helps to build a richer, softer mouthfeel and prevent the development of undesirable reductive aromas like hydrogen sulfide.
